Chicken + Stuffing
-Ingredients-
2 boxes of stuffing
2 cream of chicken soup
1/4 cup sour cream
1 can chicken gravy
2-4 chicken breasts
2 cups chicken broth
-Directions-
Mix stuffing, soups, sour cream, and broth - spread onto the bottom of a baking pan.
Top with chicken breasts and season (I use garlic powder, onion powder, parsley, pepper)
Top chicken with one can of chicken broth
Cover with foil and bake at 375 for 45-60 minutes.
(Also freezes well or can be made ahead and refrigerated)
Lasagna
-Ingredients-
1 box lasagna noodles
1 container ricotta cheese
2-4 cups of mozzarella cheese (depending on how cheesy you like!)
2 jars of pasta sauce
2 eggs
1/2 cup parmesan cheese
1 lb ground beef
1 lb ground Italian sausage
2 bell peppers
1 onion
2 tablespoons garlic
2 bay leaves
2 TSP: garlic powder, onion powder, Italian seasonings, parsley, divided
-Directions-
Brown meats
Add vegetables to the meat and cook until tender
Add sauce and bay leaves and simmer on low
Boil lasagna noodles until they are al dente (soft but undercooked)
Lay out flat on parchment paper
Add the ricotta to a bowl and mix with eggs, parmesan cheese, and seasonings, mix well
Layer the lasagna in this order:
sauce
Noodles
Ricotta
Cheese
Repeat until all ingredients are used.
Cover with foil and bake at 350 for 45-60 minutes.
Remove foil and bake an additional 10 minutes until the cheese is browned
Sausage + Gravy
-Ingredients-
16 roll of Jimmy Dean sausage
Refridgerated biscuits
1/3 cup Flour
3-4 cups of Milk (start with 3 + increase as needed)
4 tbsp Butter
Salt + Pepper to taste
-Directions-
Brown and crumble sausage in a skillet - do not drain.
Once the sausage is cooked, add butter and melt
Slowly add flour 2 tbsp at a time, stirring into the sausage
Once the flour is stirred in, slowly add milk while whisking
Add salt and pepper
Simmer on medium heat until the sauce because thick
Pour on top of biscuits
Vegetable Soup
-Ingredients-
2 stalks of celery
1 yellow onion
2 medium potatoes
1 bag frozen mix vegetables
1-1.5 lbs of beef (stew meat, London broil, etc)
2 TSP: black pepper, garlic powder, thyme, rosemary, parsley
2 bay leaves
32 oz beef broth
12 oz diced tomatos
-Directions-
Wash, peel, and chop fresh vegetables
Place the fresh vegetables at the bottom of your slow cooker
Top with meat and season with spices
Top with frozen veggies, diced tomatoes, two bay leaves
Pour beef broth over the top
Cook on low for 6-8 hours until the beef and potatoes are tender
Remove the beef, shred, and add back to the soup
Ham, Cheese, + Potatoes
-Ingredients-
16oz ham (leftover, or 2 ham steaks)
2 large potatoes
1 yellow onion
2 cans cheese soup
2 cans worth of milk
2 tsp: parsley, pepper
1 cup shredded cheddar cheese
Directions:
Peel and chop the potatoes and onion, set aside
Chop up the ham (I brown mine on a skillet, optional)
Make cheese sauce by combining soup, milk, cheese, seasonings, and onion
Spray the bottom of a slow cooker with cooking spray
Layer the ingredients in this order until all ingredients are used: potatoes, ham, cheese sauce
Cook on high for 2-4 hours until the potatoes are cooked through
