Today I am making an easy and mild Indian style butter chicken at home. I have made substitutions using ingredients I had available to me and convenient for my family. The sauce is so flavorful and delicious. You can add more red chili powder to make it spicier.

MARINADE
1 tsp (5 g) salt
1/4 tsp black pepper
1/2 tsp (2 g)red chili powder or ground cayenne pepper
1 tsp (4 g) ground tumeric
1 tsp (4 g) Garam masala powder
1 tsp (2 g) ginger paste
2 tsp (5 g ) garlic paste
3 Tbsp (45 ml) juice of lemon
1/2 cup (125 g) plain yogurt
INGREDIENTS
1 lb boneless skinless chicken breast (chopped)
6 Roma tomatoes (360 g)
1/2 small onion chopped (65 g)
1 (2g) tsp ginger paste
2 (5 g) tsp garlic paste
1 tsp (2 g) ground coriander
2 tsp (4 g) Garam masala powder
1 1/2 tsp (5 g) ground cumin
1 tsp (2.5 g) red chili powder or ground cayenne powder
1/2 tsp fenugreek powder (optional)
20 unsalted cashew nuts (40 g)
1 1/4 cup (310 m) water (used for cooking and puree)
1/3 cup (80 g) heavy cream
salt to taste
4 to 5 Tbsp unsalted butter (used through out recipe)
2 Tbsp oil for sauté
Topping Finishes
1 Tbsp dried fenugreek leaves (Kasoori Methi)
2 to 3 Tbsp heavy cream/ yogurt mixture
chopped fresh cilantro
