Different Types of Difficulty

How is it that even though everyone knows I suck at video games, I made it through Dark Souls? Why hasn't that skill translated to Sekiro, which I suck at? How come I love Super Meat Boy, but found Hollow Knight harder? There is one type of game that's harder for me than any other, and it's not defined by genre, but by skillset.
